I have never been to Eagle Nest so I unfortunately can't compare but I have twice been to the blainvillier. First time about 6 years ago and more recently two weeks ago to hit the new 714's. 

They now have a fully fonctionnal trackman and an extensive shaft matrix. The c-taper, pxi, steelfibers, nippon's ... were all availlable for the new irons. They also had plenty of X-flex offerings for the irons which really pleased me. 

They also had quite a few shafts for the 913's. Saw all the stock shafts along with a few exotics options (Tour AD, Fujikura, ...)

The person with who I did the fitting knew is stuff and was a pleasure to deal with.

Overall, I'd say they are more than capable to properly fit you/anyone!

As per Mathieu P's reply to your question, the Titleist Regional Fitting Facility at Blainvillier should be very capable of fitting you and allowing you to try out a vast number of spec combinations. 

It is also interesting to note that Mathieu P is a very skilled competitive golfer.  That is definitely a testament to Blainvillier's capabilities and spec options as Titleist Fitters if a golfer of Matthieu P's skill level can have such positive experiences during his sessions there.
