Cameron, I was looking to buy a set of 714 AP2, 3-PW but wanted the DLS300 shaft and Golf Pride Your Wrap midsize grip in white. Why are these option not available?

They are available.  The grip won't come in a standard midsize, so you will need to build up with extra wraps of tape.  Just specify these custom options to the retailer that you are looking to order them from.

If you live in Southeastern Massachusetts, there is an excellent golf fitting facility in Cranston Rhode Island, near the big DMV on route 2, called Spargo Golf.  They are a full facility offering many types of testing in outdoor bays with the monitors. You will get real life feedback along with professional treatment from the professional doing the fittings.  They also have a full practice range, 2 par 3 courses and a mini golf.

Joe, I would suggest waiting until the Manchester Lane facility opens back up.  There is no better team that will fit you for your game.  It is worth the investment when you think of what you will receive in turn.
