Not likely to get a post-delivery change to a custom order. You should work through the person you ordered from about any possible recourse or trade options. Sorry its not working out the way you hoped so far. Maybe its just more time needed to get acclimated to the difference of a new set. Good luck and hope it works out.

Your fitter should work with you. That person apparently agreed with the decision. The T200 and the 880 shaft won’t be as high launching as the AP1 and possibly the shaft (stiff is not enough context for launch characteristics). You might need a higher launching shaft to correlate with your swing. If a reshafting is in order, the fitter should at least reduce the cost to his cost. Your option to negotiate.

Titleist filled the order correctly so the best possible outcome would be for the local Titleist rep to work on some kind of compromise to get you irons that help you.

I ate a 915 driver from a large retailer and have never bought equipment from them since. Had the option to go to TPI for the 917 launch. Gaining over 20 yards was easy. The other thing I won’t do is get fit for irons or wedges on mats. Contact is easier and the launch is not like the real world. If the rep can also arrange a refit on grass that will be closer to what you need.
