TPC Cancun (N.P. Design) or Moon Palace (J.N. course)

Last year I had played Grand Coral, and this year while down there we played the Playa de Mujeres Golf Club. Both courses were in pretty good shape, but golf down there is so much different than what I am used to up here in Michigan. No elevation, different grasses, at least it's guaranteed good weather! I would recommend you check either of them out if you are near, however. 

I'm headed there for my honeymoon in late August.
